cheese

i don't eat cheese.

i've never been particularly fond of its taste or smell. coming from a mom who detests cheese, i was never raised to include it in my daily repertoire of eats (much to the dismay of my dad, who loves it). living almost 25 years without it, i have never missed  it or longed for it. even while backpacking through europe, i had no interest in sampling the multitude of cheese varieties, although i do admit everything looked incredibly appetizing.

but times have changed. this is a new year. and with g in my life, there is zero tolerance for being stubborn and finicky about something i have yet to discover.

so here is the plan: i am going to give cheese a try. little by little (g has already started this), cheese will be incorporated into my meals. i will even taste before smelling, if i can help it. i know this is a pretty hefty challenge - allowing cheese into my life - but it's seriously about time. i mean, for goodness' sake, i eat the most tart, thick, cheese-like yogurt there is, so why not stretch the palate a bit more and delve into this cheese phenomenon?!

these are exciting times, no doubt. i can just imagine the possibilities of wine pairings and beautifully constructed dishes. oh, and this year's trip to italy and france...yum! now all i have to do is domesticate this palate of mine and be not afraid of whipping it into submission.
