my last batch of strawberries was an indication that they are on their way out. they peaked and now they're being forced into the later season's submission. clearly, i'm not ready to let go. what will be of my panna cotta or my frozen yogurt mix-in? and what about a refreshing mid-afternoon snack? caught in this dilemma of disappearing strawberries, i resorted to making a strawberry conserve, courtesy of orangette.
the perfect blend of whole fruit, jam, and natural syrup, it is a no-fuss way to ensure the strawberries will last. last night, i tried it on a crostini with goat cheese and a drizzle of balsamic and man, was it good! i can imagine it doing wonders for shortcake or even sexing up a bowl of vanilla ice cream. shoot, i would just spoon some into a bowl and eat it with whipped cream.
